  Lamb and Rice Croquettes (Serves 6)

Ingredients:

  • 1 lbs. minced lamb
  • 1/2 teaspoon ground coriander
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 6 teaspoons butter
  • 1 small cinnamon stick
  • 1 or 2 cloves garlic, crushed
  • 3 onions, sliced thinly
  • 1 cup uncooked Dainty Rice
  • 2 bay leaves
  • 1/2 cup almonds (optional)
  • 2 cups hot water

    Cooking Instructions:

    1) Mix thoroughly the minced lamb, coriander, ginger and black Pepper. Make into small balls, and then roll them in flour. Heat 2 tablespoons of butter, in a frying pan. Splinter the cinnamon, add to the butter. When hot, sauté the meatballs gently over medium heat.

    2) In another frying pan heat the rest of the butter, add garlic and onion, and cook until pale brown color. Add the uncooked rice and stir until coated with butter, about 5 minutes, over low heat.

    3) Add the bay leaves, minced almonds and the hot water. Bring To a rolling boil. Add the meatballs. Cover and simmer for 20 minutes.
