Family Meal in One (Serves 6 to 8)
Ingredients:
2 lbs. ground beef
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon thyme or sage
1 tablespoon salad oil
1 large onion, chopped
1 diced celery
1 garlic clove, chopped
3 cups tomato juice
1 tablespoon sugar
1 teaspoon basil
Salt and pepper to taste
1 1/2 cup Dainty rice

Cooking
Instructions:
1) Mix the beef with the salt, pepper and thyme. Shape in one large
patty about 1 inch thick.
2) Heat the oil in a frying pan and sear the meat patty in it, about 5
minutes each side, over medium heat. Then cut into pieces the size
of a large olive. Place them on the bottom of a 2-quart casserole.
3) To the fat left in the pan, add the onion, celery, and garlic, stir over
medium heat until the onion is slightly softened. Pour over the meat.
4) Place in the frying pan, the tomato juice, basil, sugar, salt and pepper
to taste. Heat to boiling.
5) Sprinkle the rice over the meat and pour the hot tomato juice over all.
Cover and bake 45 minutes in a 350 F oven.
