Golden Spanish Rice (Serves 6)
Ingredients:
1/3 cup salad oil
1 tablespoon turmeric
1/4 teaspoon aniseed (optional)
1 onion, chopped fine
1 cup uncooked Dainty Rice
2 cups boiling water
1 1/4 teaspoon salt
1 bag fresh spinach
6 green onions, chopped fine
1/4 cup fresh dill or parsley, chopped

Cooking
Instructions:
1) Heat the salad oil, add the turmeric and aniseed. Stir quickly over
high heat until they are quite hot. Add onion and the rice, stir a
few minutes or until well blended; lower the heat and cook 10 minutes
stirring often.
2) Add the boiling water and salt. Bring to fast boil. Cover and simmer 15
minutes.
3) Wash and chop the spinach rather coarsely. Slice the green onions, mix
the spinach, onion, dill or parsley.
4) Make alternate rows of cooked rice and raw mixed greens, in a buttered
casserole. Salt and pepper each role lightly. Top with a few dots of butter.
Cover and abke 30 minutes in a 30 F. oven.
