  Lemon Rice Cream (Serves 6)

Ingredients:

  • 1 cup uncooked Dainty Rice
  • 4 cups milk
  • A pinch salt
  • 3 pieces rind cut from lemon
  • 4 tablespoons sugar
  • Cinnamon or nutmeg

    Cooking Instructions:

    1) Place all the ingredients except the cinnamon or nutmeg in a heavy metal saucepan.

    2) Cook, uncovered, over low heat, for 1 hour. Stir a few times. During the cooking period.

    3) Pour into serving dish. Sprinkle with cinnamon or nutmeg. Cover and refrigerate until cold. Serve as is or with raspberry jam.
