  Mexican Fried Rice (Serves 4 to 6)

Ingredients:

  • 3 tablespoons salad oil
  • 1 cup uncooked Dainty Rice
  • 1 onion, minced
  • 3 tomatoes, diced
  • 2 cups soup stock or consomme
  • Chili Powder
  • Salt to taste

    Cooking Instructions:

    1) Heat salad oil, add rice and cook over medium heat till nutty color.

    2) Add onion, tomatoes, soup stock or consomme and salt. Bring to fast boil. Cover and cook over low heat about 15 minutes or until rice is soft and dry.

    3) Serve with a shaker of chili powder, a dish of chopped hard cooked eggs and a bowl of black green olives.
