  Sweet Orange Rice (Serves 6)

Ingredients:

  • 1 cup uncooked Dainty Rice
  • Rind of 2 oranges
  • 1 cup sugar
  • 1/3 cup water
  • 1/2 teaspoon turmeric
  • 1 tablespoon hot water
  • 1/4 cup melted butter
  • 1/2 cup finely chopped walnuts
  • Thin slices of peeled oranges

     
     
    Cooking Instructions:

    1) Cook the rice accordingly to directions on package. Cool.

    2) While the rice is cooking, grate the orange rind into long, thin shreds. Cover with cold water, bring to boil 5 minutes.

    3) Make a syrup with the sugar and water, and when ready, add the drained orange rind. Pour this hot syrup on the cooked rice and stir with fork until the rice is well coated with it.

    4) Butter a casserole, pour the rice in it. Place in a mound in the middle. With the handle of a wooden spoon make a hole in the center of the mound.

    5) Combine the turmeric, hot water and butter. Heat until the butter is melted. Pour over the rice. Heat 15 minutes in a 350F. oven. Top with the minced nuts and serve garnished with the orange slices.
