  Macaroon Rice Pudding (Serves 6)

Ingredients:

  • 4 cups milk
  • 1/2 cup sugar
  • 1/3 uncooked Dainty Rice
  • Pinch salt
  • 2 tablespoon soft butter
  • Enough almond macaroons to cover top
  • 1 egg beaten
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon almond essence

    Cooking Instructions:

    1) Place in buttered 1 1/2-quart casserole the milk, sugar, rice, salt and butter.

    2) Bake uncovered in 325F. oven for 1 ½ hours, stirring 4 to 5 times during cooking period.

    3) Remove from oven, cover top with macaroons, rounded side up. Beat egg with vanilla and almond

    essence, pour over macaroons and bake another half hour.
