  Peach Rice Pudding (Serves 6)

Ingredients:

  • 1/2 cup uncooked Dainty Rice
  • 1 can sliced peaches
  • 2 1/2 cups milk
  • 1/4 cup sugar
  • 1/3 teaspoon salt
  • 2 eggs
  • 1/2 teaspoon almond extract
  • The grated rind of a lemon or orange
  • 2 tablespoons brown sugar

    Cooking Instructions:

    1)Cook the rice accordingly to directions on package. Cool.

    2)Drain the peaches and place the slices on absorbent paper.

    3)Combine sugar, salt, milk and eggs in top of double boiler, beat thoroughly together.

    Cook over hot but not boiling water, Stirring most of the time, until slightly thickened, about 20 minutes. 5)Remove from heat, add the cooked rice, almond extract and lemon or orange rind. Stir until well blended.

    4)In a pudding dish, make alternate layers of peaches and rice-cream. Sprinkle top with the brown sugar. Bake 30 minutes in a 350F. oven or until the custard is set. Serve warm or cold.
