  St.Lucia Molded Rice Pudding (Serves 6)

Ingredients:

  • 1/2 cup uncooked Dainty Rice
  • 1/2 envelope unflavored gelatin
  • 1/4 cup orange juice or sherry
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1/4 cup sliced blanched almonds
  • 1 cup whipping cream

    Cooking Instructions:

    1) Cook the rice accordingly to directions on package. Cool.

    2) Sprinkle the gelatin over the orange juice or sherry. Let stand 5 minutes. Dissolve over hot water. Add salt and sugar and stir until the sugar is dissolved.

    3) Add the melted gelatin-sugar mixture to the rice. Mix well and stir in the sliced almonds.

    4) Whip the cream, fold into the rice. Oil a mold and pour in the rice. Refrigerate until set. To serve, unmold and pour a bit of the chosen garnish on top.
