Rice Soup Creole (Serves 6)
Ingredients:
1/4 cup uncooked Dainty Rice
2 tablespoons butter
1 small green pepper, chopped fine
1 onion, chopped fine
4 cup beef stock
1/4 cup flour
1 cup canned tomatoes
1/4 cup tomato paste
1/2 teaspoon sugar
1 teaspoon prepared horseradish
1 tablespoon cider vinegar

Cooking
Instructions:
1) Cook rice according to instructions on the bag or on our internet site
2) Melt the butter in a saucepan, add the green pepper and onion. Simmer,
Uncovered, over low heat for 10 minutes, stir a few times.
3) Mix the flour with 1 cup of the beef stock. Add to the vegetables the balance
of the beef stock, the tomatoes and the tomato paste, the sugar, and the flour and
beef stock mixed together. Bring to the boil while stirring. Cover and simmer for
20 minutes.
4) When ready to serve, add the horseradish, vinegar and rice. Taste for seasoning.
