Minced Beef Casserole (Serves 6)
Ingredients:
4 tablespoons drippings (oil)
1 large onion, thinly sliced
1 cup chopped celery
1/2 cup minced celery leaves
1 1/2 cups uncooked Dainty Rice
1 to 1 1/2 lbs. minced beef
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon thyme
3 cups boiling water
1/2 cup grated cheese

Cooking
Instructions:
1) Melt drippings in large frying pan. Add onion, celery leaves
and rice. Stir over medium heat for 7 to 8 minutes.
2) Add minced meat and stir over high heat for 3 minutes or until meat
has lost its rawness. Season with salt, pepper and thyme.
3) Put into casserole, pour-boiling water over. Cover and bake in 350 F.
oven for 40 minutes. Remove cover, sprinkle top with grated cheese.
Cook another 15 minutes, uncovered.
