  Minced Beef Casserole (Serves 6)

Ingredients:

  • 4 tablespoons drippings (oil)
  • 1 large onion, thinly sliced
  • 1 cup chopped celery
  • 1/2 cup minced celery leaves
  • 1 1/2 cups uncooked Dainty Rice
  • 1 to 1 1/2 lbs. minced beef
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon thyme
  • 3 cups boiling water
  • 1/2 cup grated cheese

    Cooking Instructions:

    1) Melt drippings in large frying pan. Add onion, celery leaves and rice. Stir over medium heat for 7 to 8 minutes.

    2) Add minced meat and stir over high heat for 3 minutes or until meat has lost its rawness. Season with salt, pepper and thyme.

    3) Put into casserole, pour-boiling water over. Cover and bake in 350 F. oven for 40 minutes. Remove cover, sprinkle top with grated cheese.

    Cook another 15 minutes, uncovered.
