  Rice and Salmon Pie (Serves 6)

Ingredients:

  • Enough pie dough to cover 9 inch pie plate
  • 1/3 cup uncooked Dainty Rice
  • 4 tablespoons or butter
  • 4 tablespoons grated cheese
  • 1 1/2 cups canned salmon
  • 2 tablespoon flour
  • 1 cup milk
  • 1 egg lightly beaten

    Cooking Instructions:

    1) Line pie plate with your favorite dough. Bake until light brown.

    2) Cook rice according to directions on package. Mix hot cooked rice with 2 tablespoons of butter and 2 tablespoons of grated cheese. Place in the baked pie shell. Place on top the shredded salmon.

    3) Make the white sauce with the 2 remaining tablespoon of butter, the flour and the milk. When creamy and smooth, remove from heat and add the lightly beaten egg, while stirring. Pour over the salmon. Sprinkle with the remaining 2 tablespoons of grated cheese. Bake 10 minutes in a 450 F. oven. Serve hot or cold.
