  Sausages New Orleans (Serves 6)

Ingredients:

  • 2 tablespoons bacon drippings
  • 2 medium sized onions, minced
  • 1 can tomato paste
  • 1/2 cup diced celery or green peppers
  • 1 lbs. of link sausages, cut in 2
  • 1 cup uncooked Dainty Rice
  • Salt and pepper to taste
  • 2 bay leaves
  • 2 cups water
  • 4 green onions

    Cooking Instructions:

    1) Heat bacon drippings in heavy frying pan. Add chopped Onion and fry till edges begin to brown. Add the sausages, cook until brown. Remove excess fat.

    2) Add tomato paste, green pepper or celery. Cook over medium heat for 10 minutes. stirring most of the time. Place in a sauce pan.

    3) Add rice, bay leaves, salt and pepper to taste and water. Bring to a boil. Cover and simmer 15 minutes until rice is dry and fluffy.

    4) To serve, place in warm serving dish and top with minced green onions.
