  Rice au Gratin Supreme (Serves 6)

Ingredients:

  • 4 cups cooked Dainty rice
  • 1/2 cup each finely chopped onions and green pepper
  • 1/4 cup chopped pimientos
  • 1 can condensed cream of mushroom soup
  • 1/3 cup of salad dressing or mayonnaise
  • 2 cups grated Cheddar cheese
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

    Instructions:

    Combine rice, onions, green pepper, and pimientos. Blend soup, salad dressing, 1 cup cheese, milk, and seasonings. Stir into rice mixture. Turn into a buttered shallow 2-quart casserole. Sprinkle with remaining cheese. Bake at 350 F. for 25 minutes or until hot and bubbly.
