  Classic Rice Salad (Serves 6)

Ingredients:

  • 3 cups cool cooked Dainty rice
  • 1/2 cup each finely chopped onions and sweet pickles
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup mayonnaise
  • 1 teaspoon prepared mustard
  • 1/4 cup diced pimientos
  • 4 hard-cooked eggs, chopped

    Instructions:

    Blend all ingredients thoroughly. Chill. Serve on lettuce leaves, if desired.
