  Plum Ginger Chicken Salad (Serves 6)

Ingredients:

  • 1 to 2 cups wild Dainty rice mix
  • 2 cups cooked boneless chicken breast cubes
  • 1/2 cup sliced green onions
  • 4 plums, sliced
  • 2 teaspoons vegetable oil
  • 2 tablespoon lemon juice
  • 1 tablespoon soy sauce
  • 1/2 teaspoon ground ginger

    Instructions:

    Prepare wild rice as directed; cool at room temperature. Combine rice, Chicken, green onions and sliced plums in large mixing bowl. To prepare Dressing, combine oil, lemon juice, soy sauce and ginger; pour over rice Mixture and toss lightly. Chill until served.
