  Creamy Lemon Rice Dessert (Serves 8)

Ingredients:

  • 1 lemon_flavoured gelatin dessert (4 serving package)
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 cup cooked Dainty rice
  • 1 1/2 cup whipped cream
  • 1/4 cup almonds; sliced
  • 1/4 cup maraschino cherries; chopped
  • 1 tablespoon lemon zest

    Instructions:

    Dissolve gelatin powder in boiling water in a large bowl. Stir in cold water. Place bowl into gelatin; fold in whipped cream until smooth. Lightly fold in almonds, cherries and lemon zest. Place in bowl back into ice water and stir gently until thickened. Pour into dessert dishes. Cover and chill for 4 hours.
