  Rice Pudding (Serves 6)

Ingredients:

  • 4 cups skim milk
  • 1 cup “Dainty All-Purpose Medium Grain”
  • 1/3 cup sugar
  • 1/2 tsp. Cinnamon
  • 1/4 tsp. Salt
  • 3/4 cup dried cherries
  • 1/2 cup whole milk
  • 1/2 tsp. Vanilla

    Instructions:

    In a large saucepan combine 3 cups of skim milk, rice, sugar, cinnamon and salt. Cook over medium heat, stir occasionally, about 15 minutes until mixture starts to Thicken slightly. Stir in remaining cup of skim milk and dried cherries. Cook, stirring frequently until mixture thickens. Add whole milk and cook, stirring constantly; about 7 minutes until mixture becomes thick and creamy. Remove from heat and stir in vanilla. Spoon into individual serving bowls.

    Note: Can substitute dried cherries with raisins
