  Chicken Caruso (Serves 6)

Ingredients:

  • 2 whole chicken breast, skinned, boned, and cut into thin strips
  • 3 tablespoons butter or margarine
  • 2 cups sliced celery
  • 2 cups spaghetti sauce
  • 1 teaspoon Italian seasoning
  • 3 cups hot cooked Dainty rice

    Instructions:

    Season chicken with garlic, salt and pepper. Saute in butter about 2 minutes. Add Celery; continue cooking until celery is tender crisp. Stir in spaghetti sauce and Italian seasoning; cover and simmer 10 minutes. Serve over bed of Dainty rice. Sprinkle with grated Parmesan cheese, if desired.
