  Curried Rice with Chicken (Serves 4)

Ingredients:

  • 2 teaspoons canola oil
  • 1 tablespoon of curry powder
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground all spice
  • 1 cup chicken broth
  • 5 ounces of skinless and boneless chicken cubes
  • 1 cup unsweetened applesauce
  • 1 1/2 cups of Dainty Basmati Rice
  • 1/2 cup plain nonfat yogurt

    Instructions:

    In medium non-stick skillet, heat oil. Add curry, flour, ginger and allspice and stir-fry 2 minutes. Add chicken broth, stirring until smooth. Add chicken and apple sauce; cook 3 minutes more. Add rice and 2 1/2 cups of water to pan; simmer, covered, 20 minutes; stir 2-4 times, until rice is cooked. Remove from heat; stir in yogurt.
