Curried Rice with Chicken (Serves 4)
Ingredients:
2 teaspoons canola oil
1 tablespoon of curry powder
1 tablespoon all-purpose flour
1 teaspoon ground ginger
1/2 teaspoon ground all spice
1 cup chicken broth
5 ounces of skinless and boneless chicken cubes
1 cup unsweetened applesauce
1 1/2 cups of Dainty Basmati Rice
1/2 cup plain nonfat yogurt

Instructions:
In medium non-stick skillet, heat oil. Add curry, flour, ginger and allspice and
stir-fry 2 minutes. Add chicken broth, stirring until smooth. Add chicken and
apple sauce; cook 3 minutes more. Add rice and 2 1/2 cups of water to pan; simmer,
covered, 20 minutes; stir 2-4 times, until rice is cooked. Remove from heat; stir in
yogurt.
