Rice is available in a variety of forms:

Rough Rice:
Often referred to as ''paddy rice,'' rough rice comes directly from the rice fields. The kernel of rice is still within the hull. Before taking on any other transformation, the outer hull or husk must be removed.

 

Brown Rice:
Brown rice is the whole, unpolished grain of rice. When cooked it has a slightly chewy texture and nut-like flavour. The light brown colour is a result of the presence of the bran layers, which are rich in minerals and vitamins, especially the B complex group. Brown rice is also a source of highly unsaturated oil, giving it an excellent reputation as a cholesterol fighter, and is the only rice that contains vitamin E. Brown rice cooks in approximately 40 to 45 minutes.

 

Parboiled Rice:
Parboiled rice, also known as ''conditioned,'' ''converted'' or ''perfected'' has been soaked and steamed under pressure before milling. This forces many of the nutrients to stay within the grain after processing, giving the raw uncooked rice a slightly amber color . During the parboiling process, the surface starch is reduced and gelatinized, which when cooked produces a white rice that is somewhat more firm in texture, less sticky, fluffy and separate . Parboiled rice cooks in approximately 20 to 25 minutes.

 

Regular Milled White Rice:
Regular milled white rice has had the hull, bran layers and germ removed through milling. It is sometimes called ''polished white rice.'' It takes approximately 15 minutes to cook.

 

Quick Cooking Rice or Instant Rice:
Quick cooking rice is cooked and then dehydrated after the milling process. It takes less time to prepare than other forms of rice usually only 5 minutes.

Wild Rice:
Wild rice, in fact, is not rice at all! It is not even a grain, but a grass seed from a different botanical family. Nutty and rich in flavour, wild rice has about twice the protein as other rice. Dainty's Long Grain and Wild Rice combination is a gourmet treat that is prepared in 25 minutes.

 

Dainty "Canned" Rice, contained in our Flavored Rice Mixes:
Dainty precooked canned rice has been throughly cooked for your convenience. Because it has not been dehydrated like most other '' instant'' type rice, Dainty's pre-cooked canned rice maintains it's ''just cooked'' plump structure and true rice taste.
